Observation: Rodent droppings observed from edge-to-edge underneath the prep table.
Corrective Action(s): Remove all rodent droppings with 9 parts water, 1 part bleach solution. Ensure that you thoroughly bleach and disinfect the area to remove the droppings. Contact a professional pest control company to come on a monthly basis to help control your rodent infestation.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Area underneath cook line accumulating more filth and oil.
2. Area underneath the back prep table is still in poor sanitary condition with old grime and debris present.
3. Walls and tiling underneath dishpit need to be thoroughly cleaned and existing mould removed.
4. Ventilation canopy has accumulated large oily deposits.
Corrective Action(s): A deep clean of the aforementioned areas still needs to occur. It is evident that more effort needs to be put in to cleaning these areas in the kitchen. Poor sanitary conditions will be an attractant for rodent activity. Ventilation slats need to be degreased and run through the dishwasher.

Area underneath cook line has further accumulated more debris and oil, and will need to be degreased as per above. There may be further progressive enforcement, including issuance of violation tickets or correction orders, if the sanitary condition of the restaurant does not improve.
