Observation (CORRECTED DURING INSPECTION): While dishes were being manually washed at the end of the day, the handsink was used to put the cleaned equipment and was therefore blocked. Equipment and utensils were removed when notified.

Comments

General Comments:
-Hand washing station fully supplied with liquid soap and paper towels.
-Walk-in freezer -17C
-Meat slicer appeared cleaned (no food debris)
-Walk-in cooler 2C
-Bleach available. Discussed with operator that bleach should be at 100ppm (2mL bleach per liter of water).
-No evidence of pest at time of inspection. Pest control contract in place for services monthly.
-Staff demonstrated manual dishwashing procedure:
Remove all equipment parts, scrap out the meat debris, wash, rinse and sanitize with 200ppm bleach.
*Since there is only a two compartment sink available, we have discussed to wash and rinse in the first sink and then soak in sanitizer in the second sink at 100ppm for 2 minutes, then air dry.
