A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -16C; and thermometers present.
- Hot holding monitored by time, not temperature.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles had [Cl2] over 200ppm.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins separate or on lowest shelves; and food stored 6" off the floor.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory, improvement needed in the mentioned areas. Improvement noted in racks and shelves cleaned regularly, and lower shelves below prep tables are clean. The exhaust canopy has been professionally cleaned (Sept. 2020), and service sticker indicates next cleaning due in March 2021.
- FoodSafe certified staff present.
**All wiping cloths MUST be stored in a bucket of bleach sanitizer when not in use. Change the bleach sanitizer every 2-4 hours.**
- Discussed inspection results with the owner, no signature obtained due to the pandemic.
- No signs of pests. |
