Observation (CORRECTED DURING INSPECTION): * Wiping rags were found being stored on counters and this is unsanitary; ensure all wiping rags stored in sanitary manner between use (eg. in sanitizer bucket with active sanitizer)

Observation (CORRECTED DURING INSPECTION): * Some cooked chicken on tray was found uncovered in walk-in cooler and not protected from contamination; operator discarded this chicken and was reminded to cover all food in storage areas to protect it from contamination

Observation: * Build up of grime/debris found in bar area under glass washer(eg. chicken bone, glass, etc) and this area has not been properly cleaned/maintained for period of time; operator/staff reminded to clean/maintain ALL areas properly to remove build up of grime/debris; Some areas of kitchen also found build up of grime/debris that requires more frequent cleaning attention
Corrective Action(s): * Ensure all areas properly cleaned and sanitized including UNDER equipment/legs/wheels and between food equipment too(eg. cooking line equipment); operator said they have been working on cleaning today and will work on it through out next few days to remove all build up of debris/grime and maintain sanitary condition

* Sanitizer was available but some wiping rags were found on counters; operator reminded to store wiping rags in sanitizer between use
* Monitoring records were available and up to date for temperature but cleaning records were not; operator to start monitoring/documenting cleaning again
* Note: keep all food OFF floors (eg. in dry storage room)
* Dishwasher final rinse was 50 ppm chlorine residual at plate surface; glass washer (iodine sanitizer) had final rinse of less than 12.5 ppm iodine residual; iodine to be 12.5-25 ppm iodine concentration
* Note: ensure ALL food covered in storage areas
* Note: some cleaning to be done in kitchen and bar
