302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Staff stated that the band saw is wiped down with wet cloth (dipped in water) after each use and dismantled at the end of the day for washing. They use bleach 'sometimes' to disinfect the band saw and meat grinder. Bleach spray bottle was found empty at the time of inspection. Staff made new disinfectant solution which was far greater than 200ppm.
Corrective Action(s): Ensure that the food contact surfaces including equipment and utensils are cleaned and disinfected after each use. Band saw and meat grinder should be cleaned and disinfected every 4 hours if in continuous use, between different meat and at the end of the day. At least 200ppm of bleach solution is recommended for proper sanitation of the food contact surfaces. Use 5ml of bleach for every 1 litre of water. If possible, use of chlorine test strips is recommended.

Observation: Heavy mouse droppings were observed in the electrical closet.
Corrective Action(s): All rodent droppings are to be removed with 1 part bleach in 9 part water solution. Soak rodent droppings in bleach solution for 10-15minutes and remove with paper towels. Sanitize the area afterwards. Wear personal protective equipment including gloves for clean-up.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Temperature gauge outside the walk-in cooler and walk-in freezer in the meat department does not display accurate temperature.
Corrective Action(s): Ensure that the temperature gauges are serviced regularly. Place thermometer in the cooler and freezer to record temperature.

Comments

Routine inspection conducted at the food store. The facility has a meat department for selling halal meats. The following observations were made on site:

Meat department:
- Display coolers at the front recorded at 3C (bottom) and 2C (bottom) respectively. However, the temperature on top was found above 8C. Probe thermometer was used to record internal temperature and found at 4.5C.
Ensure that the door of display coolers are closed after each use (even during busy hours).
- Walk-in cooler was recorded at 5C.
- Walk-in freezer at -13C.
- The facility has 2 compartment sink for cleaning and sanitizing equipment.
Use proper drain plugs for the sink.
- Handwashing sink was provided with hot and cold running water, liquid soap and paper towels.
- Staff demonstrated proper cleaning and disinfection of work station.
- Read my comments above regarding cleaning and disinfection of meat grinder, band saw and the concentration of bleach solution.

Store:
- Temperature of walk-in cooler recorded at 2C.
- Chest freezer (ice-cream) at -22C.
Ice build up was noted in this freezer and will require cleaning.
- Large chest freezer recorded at -9C.
- Food products were stored 6" off the floor.
- Bulk food items were maintained in sanitary condition with scoop stored outside the bin.

Note: Large chest freezer (x2) were out of service. As per the staff, the freezers will be replaced. No food was stored in these freezers.

COVID-19:
- The facility has COVID-19 protocols in place.
- Staff was observed wearing face mask.
- Daily employee health checks were conducted and records were maintained.
- Proper signage and maximum occupancy limit was posted.
