304 - Premises not free of pests [s. 26(a)]
Observation: Droppings located in the following areas of the establishment:
1) Along the back (north) wall of the facility where the employees' shoes are located.
2) Underneath the soft drink storage area next to the back door.
3) Alongside the entire east wall of the facility. This means around the shelving where the pizza pans are stored, underneath the pizza prep coolers and prep tables.
Corrective Action(s): 1) All equipment in affected areas must be moved off the walls so that the floor can be disinfected. Use 1 part bleach, 9 parts water and thoroughly soak the droppings for 10-15 minutes. Remove droppings into a secure bag and discard. Disinfect area once more after droppings are removed.
2) Pizza pans that are currently in the same shelf as the droppings must be rewashed, rinsed, and sanitized in your 3-compartment sink.
3) Store all washed and sanitized equipment and flour inside pest-proof containers.

Observation: Gap present at the bottom of the back door.
Corrective Action(s): Seal the gap (e.g. with a secure door sweep). Note that rodents can enter through cracks less than 1/4" wide.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Buildup of mould-like residue noted above the 3-compartment sink.
Corrective Action(s): Remove mould-like residue using a strong bleach solution (1 part bleach, 9 parts water) and thoroughly scrub. Remove old, contamianted grout and re-grout area above. Remember that any moist areas (e.g. dishpit) will eventually have mould formation if they are not routinely cleaned.

Comments

Routine inspection conducted. The following observations were noted at time of inspection:

1. Temperatures
- Walk-in cooler at 2C
- Pizza prep cooler at 2C (top & bottom)
- Beverage cooler at 4C
- Pizza hot-holder (front-of-house) and Cres-Co hot-holder both at >= 60C
- Pizza approved for room-temperature holding is on a timer system for 2 hours
- Temperature logs are maintained and up-to-date. Cooking logs audited and up-to-date
- Thermometer units present inside coolers and hot-holders

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels
- Quaternary ammonium compound (QUATS) sanitizing pails present at 200 ppm. Reminder: These need to be switched out every 2 hours
- 3-compartment sink ready for use at time of inspection. Sanitizing compartment contained 200 ppm QUATS
- Knives stored in sanitary condition

3. Storage Practices
- Food products are all covered when not in use - excellent
- All food products stored at least 6" off the floor

4. Pest Control
- Professional pest control company conducts routine audits. Email the past 3 reports to the Environmental Health Officer for review
- 2x mechanical traps did not contain any rodents at time of inspection

5. Administrative
- Permit posted and up-to-date
- Manager has BASICS.FST 4th edition (Expiry: September 2023)
