302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): The following observations were made:
1. Bleach water sanitizer at 0ppm concentration during time of inspection. Bleach water sanitizer must be at 100ppm concentration at all times.

2. Dishwasher reached only 61c for rinse cycle at dish level. Dishwasher must reach atleast 71c at dish level and 82c on manifold gauge.
Corrective Action(s): 1. Employees prepared new bleach solution for sanitizer during time of inspection. Bleach water sanitizer at 100ppm concentration.
NOTE: Ensure all sanitizers buckets/spray bottles are changed on routinely basis. Sanitizer bucket/spray bottles to be placed in each prep area in kitchen.

2. Dishwasher mechanic was called during time of inspection. Dishwasher was fixed and measured at 71.7c at dish level.

209 - Food not protected from contamination [s. 12(a)]
Observation: Dry storage items (ie. lentils) found in open bag(s). All items must be stored free from any contamination.
Corrective Action(s): Ensure all open bag items are transferred to food grade containers with covers immediately. This will also prevent the entry of any pests and protect from contamination.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation (CORRECTED DURING INSPECTION): Sticky fly traps found in food prep area. These are not allowed as they can lead to the contamination of food.
Corrective Action(s): Employee removed stick fly traps during time of inspection. Install other measures of pest control for flies. No issues or fly activity noted during this inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food prep is being done on chest freezers. Chest freezers require thorough cleaning.
Corrective Action(s): Ensure all equipment is being cleaned on routine daily basis.

Observation: Plastic disposable containers found throughout facility for the use of food storage. Do not use any plastic containers as they are not made to be reused and can cause contamination to food.
Corrective Action(s): Remove all disposable containers. Ensure to obtain food grade containers that can be reused and cleaned, sanitized properly.

Routine Inspection:
Handwashing station is equipped with hot/cold running water, liquid soap and paper towels.
Walkin cooler at 4c. Insert coolers at 4c.
All chest freezers at -18c.
No hot holding units being used during time of inspection.
All foods found to be located off the floor.
Employees observed to have adequate protective equipment.
NOTE: ensure all staff wash hands between all tasks.
No pest issues noted. Pest control is in place and being completed on a monthly basis.
Pest control contracted to Apna Pest Control.

The following requires operators attention:
1. See above noted violations
2. Reorganization is required throughout kitchen facility.
Please pay special attention to the following areas:
- dry storage area (separate the food items from the non-food items/containers)
- dishwashing area (discard any containers/equipment that is not in use
- chest freezers
3. All bbq trays should be stored in a designated area. Designate a separate area in kitchen for the storage of these bbq grill.
