Observation: Observed an open bag of rice and an open bag of sugar in its original packaging.
Corrective Action(s): Any opened bags of foods must be tightly re-sealed or transferred to a food grade container with a tight fitting lid. Correct this by: March 23, 2022

304 - Premises not free of pests [s. 26(a)]
Observation: Rat droppings were cited, but not limited to, the following areas:
- Behind the oven
- On top of grease trap
- In between and behind the black crate with yellow lids (right side of the wall when entered)
Corrective Action(s): Clean and sanitize areas impacted by rat droppings. Soak droppings with 100 ppm bleach sanitizer for 10-15 minutes before picking them up with paper towels. Correct this by: March 23, 2022

Observation: Large openings noted on the dry walls behind the oven.

Observation: Sanitation improvement required in the following areas:
- Heavy grease accumulation on the wall by the back exit (next to dishwashing area)
- Under coolers (e.g., cooler #4, #5, etc.)
- Food debris around the kitchen near wall to floor junction
- Food spills in dry storage area (in between black crates with yellow lids)
Corrective Action(s): Clean and sanitize area described in the observation section. Correct this by: March 23 2022

Routine inspection conducted:
*NOTE: the facility was near the closing at the time of inspection, and few equipment were turned off. Some equipment to be tested in a subsequent visit (e.g., dishwasher).
**NOTE: The cooler #5 was measured at 11C. This cooler is only used for temporary food holding while packing. Observed packers actively using items from cooler #5 while packaging. Do not use the cooler #5 for storing any potentially hazardous foods for more than an hour.

Hand washing stations fully equipped with hot and cold running water, liquid soap and paper towels.
Coolers measured at 4C or less.
Freezers measured at -18C or less.
Hot holding units measured at 60C or higher.
QUATS sanitizer measured at 200 ppm as per test strips.
Food storage practice is generally adequate (e.g., raw protein away from vegetables and other ready-to-eat products)

Retain a copy of pest control reports for review in a subsequent visit.
