Coolers are at 4 C or colder - good. Keep daily temperature records.
Hot holding (gravy, soup, mushy peas) are all at 60 C or hotter.
Batter - store in fridge or use within 2 hours. Operator advises batter is used or discarded after 2 hours. Keep time tracking for time control.
Dishwasher has a chlorine sanitizing rinse - 50ppm chlorine detected after final rinse - good.
Cleaning - see above.
Food Safe - operator has valid Food Safe. Check dates on certificate. Certificates expire after 5 years and a refresher course or full course is required to renew certification.
Pest control program is in place (includes monitoring).
Upstairs storage rooms (at 15479 Marine Drive location) also inspected today.
