Observation: Flies observed at back-of-house near the 3-compartment sink.
Corrective Action(s): Clear out the drain at the back-of-house. Drain needs to be fully operational. Some syrupy residues at the back-of-house need to be mopped. Ensure that your facility remains in good sanitary condition to avoid the accumulation of pest attractants (e.g. syrups, organic debris).

Observation: 1. Area at back-of-house (storage area) has accumulated boxes and clutter throughout the area.
2. Dishpit area has accumulated syrupy residues, floor drain blocked and accumulating debris.
Corrective Action(s): Debris needs to be throughly cleaned and floor drain is to be cleared out and functional.

Observation: Small pipe leakage present underneath 3-compartment sink.

Comments

Routine inspection conducted of 7-11. The following observations were made at time of inspection:

1. Temperatures
- Hot-holding cabinet (both top and bottom shelves) maintains at >=60C
- Taquito rollers at 60C
- Store walk-in cooler varies from 2-4C
- Cheese hot-holding unit at 59C
- Ice cream standing freezer at -14
- Back two-door freezer at -22C
- Chest ice cream freezer at -24C
- Hot-dog condiment station at 5C (top) and 0C (below). Reminder that the lids on the condiment stations are to be closed when not in use
- Undercounter cooler (behind POS) at 4C
- Reach-in display cooler at 2C
- Undercounter freezer (behind POS) at -14C
- Temperature logs are up-to-date and well maintained. Thank you
- Thermometer units present inside coolers and hot-holders

2. Hygiene and Sanitizing
- Quaternary ammonium compound (QUATS) spray bottle present at front-of-house at 200 ppm
- QUATS dispenser at back releases 200 ppm at 3-compartment sink
- Utensils labelled as "cleaned" are in good sanitary condition at front-of-house

3. Storage Practices
- All food products are covered when not in use. Ingredients are inside original packaging or inside containers when not in use
- Chemicals stored separately from food products
- Mop sink is generally well maintained

4. Pest Control
- No evidence of any recent, visible pest activity at time of inspection
- Facility contracts out professional pest control company for routine checks. Please ensure traps are equipped with adhesive pads
