Observation: Found a number of drain flies near the back entrance of the restaurant. Also noticed that the metal lid for the grease trap is not sealed properly and there is a crack in the middle portion of the lid. Drain flies could lead to food contamination.
Corrective Action(s): The grease trap must be serviced and cleaned by a professional contractor. Replace the grease trap lid so that it seals properly.
Please send a copy of the grease trap service record to our office ( Immediately).

Observation: Commecial high temperature dishwasher has not been hooked up to dishwasher detergent and rinse aid chemicals.
Corrective Action(s): You must hook up the dishwasher to manufacturer approved detergent solution and rinse aid chemical. ( Immediately)

Observation: Dishwasher is not in working order. Currently, the dishes are washed by hand in two compartment sink
Correction: Repair or replace the dishwasher immediately. Ensure that new diswasher is of commercial type (i.e reaches at least 60 C during wash cyle and 82 C during sanitizing cycle). In the interim, you are only permitted to use disposable dishes.( ImmediatelyP

A new dishwasher has been installed. Final rinse temperature at the plate surface registered 71 degrees C.
* The dishwasher must be connected to commercial dishwasher detergent and rinse aid chemical buckets.

Buckets containing marinated meats and poultry are now stored in a separate cooler. Ensure that these buckets are never used
for storing any soups, sauces or vegetables. Only use new food-grade containers for storing ready to eat products and vegetables.

*Upright cooler at 7 C. Currently it is only being used for vegetables. Repair or adjust the unit so that it is maintained at 4 C or below.
* Clean floor near the back entrance.
