Observation (CORRECTED DURING INSPECTION): 1. Discussed manual dishwashing procedures with staff - dishware is washed with soap, rinse in water, soak in bleach sanitizer for 5 minutes, then rinse and air dry.
2. For equipment that is to clean in place (ie. mixer), no sanitizer is used to sanitize equipment.
Corrective Action(s): Ensure proper procedure is followed for all dishware and equipment:
1. Wash in hot soapy water
2. Rinse in hot clean water
3. Soak in sanitizer for 2 minutes OR spray equipment with bleach sanitizer
4. Air dry
