Hand wash stations equipped with soap and paper towel Coolers less than 4C/Freezers less than -18C Premises well maintained No signs of pests Food storage good, covered Bleach solution used for wiping counters, over 100ppm residual Cl Dishwasher 0ppm residual chlorine, dishwasher to be serviced to maintain at least 50ppm residual chlorine. Wash dishes in 3 compartment sink and soak in a bleach solution in 3rd compartment sink, 100ppm residual chlorine (approximately 2 ounces bleach to one gallon water concentration). Soak dishes for 2 minutes then air dry before storage. Dishwasher has significant mineral deposit inside machine, mould observed inside on door and interior wall. Clean interior of dishwasher.
