Corrective Action(s): Operator prepared a new bleach water sanitzer solution at 100ppm concentration during time of inspection. Ensure all sanitizer bottles are being stored in food prep areas as discussed during inspection. Violation Score: 5

Routine Inspection. All handwashing stations are equipped with liquid soap, hot/cold running water and paper towels. Coolers in sushi prep area are at 3c. Stand up coolers found at 4c. Walkin cooler at 4c. Prep coolers in cooking area at 4c. Freezers at -18c or below. All are equipped with thermometers. All Hot holding units are 60c. All foods are being stored off the floor. Dishwasher reached 80c at dish level for rinse cycle. Sanitizer bottles are labelled appropriately. No pest control issues noted during time of inspection. Cooking area hood vents found in sanitary condition. Walkin cooler is being cleaned on weekly basis as per operator. Overall sanitation is satisfactory. The following requires operators attention: 1. see above noted violation(s) 2. Pest control is in place however, it is recommended that a professional pest control company is contracted for pest services.
