Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: - All food equipment, food contact surfaces, food storage containers, utensils have been potentially exposed to cockroach activity and direct contact with cockroaches.
- All storage items and areas for the above listed times have been potentially exposed to cockroach activity and direct contact with cockroaches.
Correction: **Once all cleaning requirements listed in Violation 304 and 306 have been completed, and the pest control service has been completed, wash and sanitize the above listed items:
- Wash and sanitized every item listed above.
- Sanitize using 100-200 ppm chlorine bleach sanitizing solution (1 tsp chlorine bleach + 1 L water).

- Required cleaning of the premises (unless otherwise mentioned) has been completed.
**Continue to work on maintaining a higher level of sanitation throughout the premises, especially in hard to reach areas (behind, under, between all equipment and shelving, floor/ wall edges, walls, floors, top surfaces of taller pieces of equipment, etc.)
**Continue to maintain a high level of sanitation in all areas of the premises (kitchen, front service area, dry storage room, etc).

- Food contact surfaces and food equipment have been cleaned and sanitized.
**Ensure all food contact surfaces and food equipment are cleaned and sanitized before resuming any food preparation.

- Dishes, utensils, and smaller pieces of food equipment were removed from the premises so that the space in the premises could be thoroughly cleaned.
**Ensure that all dishes, utensils, and smaller pieces of food equipment are washed and sanitized before using.

- Operator stated that all opened food containers and opened food packages were discarded.
- Operator stated that all single use food packaging was discarded.

- Prior to re-stocking premises and resuming food preparation for food service to the public, operator must complete the following:
- Change oil in fryers.
- Discard and replace cooking equipment oil guards (operator is unable to remove heavy food and grease accumulation).
- Clean and disinfect dry storage room inside wall and ceiling corner (where there is evidence of cockroach feces).
- Remove ladder and soda crates from the premises.
- New packages of dry ingredients must be stored in tight-lid pest-proof containers.
- Store ALL items at least 6" (15 cm) off the ground. The use of beverage crates and/ or milk crates is not an acceptable form of "shelving".

- Premises was serviced by a pest control company on 14-Feb-2024. Service report reviewed. Treatment for cockroaches was applied. Operator provided information of treatment used.
**Schedule another pest service within 2 weeks. Pest service should include further inspection and baiting if required.
**Operator advised that another pest service next month has been scheduled.
**Ensure ALL areas of the premises are available for pest control services.
**Follow all recommendations provided by your pest control service technician.
**Continue to monitor for pest activity. Report new and/ or increased activity to your pest control company.
**Take immediate corrective actions if new and/ or increased activity is observed.
