Observation (CORRECTED DURING INSPECTION): - Taquitos and smokies stored in cooler which was operating at >4C.
Corrective Action(s): - Product transferred to walk-in cooler as temperature records indicate product was above 4C for less than 2 hours.

Observation: - Condiment cooler was at 14C at time of the inspection. Records from earlier in the day indicate cooler had been <4C. It appeared the door may not have been closed fully which may have impacted temperature; however, temperature did not decrease during inspection.
Corrective Action(s): - Have cooler repaired/serviced so that it is able to maintain a temperature of 4C or colder. Do not store any potentially hazardous food in this cooler until it is operating at 4C or colder.

- Handwashing sink supplied with hot and cold water, liquid soap and paper towel.
- Staff washroom maintained with liquid soap and paper towel.
- Coolers were operating at acceptable temperatures (4C or colder) with the exception of condiment cooler noted in violation above:
- Walk-in cooler 3C
- Single door undercounter cooler 4C
- "Fresh & Ready" cooler 3C
- Walk-in cooler 3C
- Freezers were maintaining product in a frozen state:
- 2 door True freezer -16C
- 2 door Beverage Air freezer -15C
- 2 door display freezer -23C
- Ice cream display freezer -28C
- Hot holding of potentially hazardous foods was at acceptable temperatures (60C or higher)
- Breakfast Taquito 68C
- Cheddar smokie 80C
- Chicken strips 67C
- Pizza 66C
- Corndog 74C
- Temperature monitoring in place for cold holding and hot holding. Records appear up to date.
- Quats sanitizer present from dispenser at 3 compartment sink and in spray bottle at front service counter. Concentration measured 200ppm.
- Manual warewashing in place. Plug present for sink to allow dishes to be immersed in sanitizer.
- No evidence of pest activity noted at time of the inspection. Pest control contract in place with monthly service.
- Asst Mgr present and has completed Foodsafe level 1 equivalent (completed July 2020)
