Observation (CORRECTED DURING INSPECTION): Sausages internal temperature observed at 7.1 C and whole cheese at 6.9 C. Far left display cooler holding cheese, sausages, and salads observed at 6.4 C.
Corrective Action(s): All items in cooler were removed and placed in walk-in cooler holding 4 C. Do not place potentially hazardous food in display cooler until it has been serviced or is holding a temperature of 4 C or below to prevent the growth of bacteria.

Observation: Various foods including cheese and sausages observed stored in containers directly on the floor in the walk-in cooler.
Corrective Action(s): Ensure all food is stored at least 6 inches off the floor to protect food from contamination.

Observation: Rodent droppings observed in back storage area behind office and between the walk-in cooler and wall.
Corrective Action(s): Clean, disinfect and remove rodent droppings. Disinfect area with bleach and wear a mask and gloves to clean the area. Contact pest control company to monitor the premises.

Observation: 1. Hole larger than 1/4 inch observed in back storage area by rodent droppings.
2. Gap larger than 1/4 inch observed under back door in kitchen area downstairs.
3. Large amount of water observed on floor in downstairs kitchen area dripping from air conditioning unit.
Corrective Action(s): 1. Seal any holes and gaps in premises to prevent the entry of pests.
2. Remove all standing water and have air conditioning unit replaced to prevent the attraction of pests.

2. Air conditioning unit in downstairs kitchen observed with a hole releasing large amount of water on to the floor.
Corrective Action(s): 1. Have cooler repaired to ensure it holds a temperature of 4 C. Do not place potentially hazardous foods in the display cooler until it holds 4 C or below.
2. Have air conditioning unit repaired to prevent water from accumulation on floor below.

- Ice machine and scoops in good sanitary condition
- Raw meat stored away from Ready to Eat food items
- First In First out and date stamping methods observed in use
- All food items covered in cooler and freezer units

- Back door closed during inspection
