Observation: Soap and sanitizer for the 3 compartment sink beside the freezer unit is not in good working order as they are incapable of dispensing the chemical at the appropriate temperature. Have the units repaired.

Comments

Routine inspection conducted and the following were noted at the time of inspection.
Walk-in cooler, deli display case and under counter prep-coolers were less than 4C.
Internal temperature of hot foods in the closed and open display cases were at least 60C internally.
Cooking temperature for food products were being recorded.
Deli slicer was clean.
Quats dispenser being the walk-in cooler was at 200ppm. Quats test strips available.
Retail cheese cooler was at 4C.
General sanitation was satisfactory and no pest activity noted.

The following requires monitoring.
Air temperature for soup/sandwich cooler was at 8C. Temperature for food products was at 6C. Monitor the cooler unit to ensure it is capable of maintaining food products at a temperature of 4C or below.
