A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; thermometers present; and temps recorded every 2 hours.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher had a rinse cycle temp above 77C at the plate's surface, as per thermolabel. Staff use a waterproof thermometer to monitor the temp of the dishwasher every day.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins below RTE foods; and foods stored 6" off the floor on shelves and platforms.
- Ice wands used to cool foods down. Ice wands stored on the highest shelf in the walk-in-freezer.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- Exhaust canopy and filters are clean. Service sticker indicates they were professionally cleaned and serviced in February 2024. Staff remove the filters at least 2x a week to remove grease and dust.
- All staff possess a valid FoodSafe certificate or equivalent one.
- Quats sanitizer in spray bottles and cloth buckets had strength of 200ppm. The solution is changed every 2 hours, and test strips present.
- All surfacers are in good working order.
