Comments

- Walk in freezer installed where upright freezer unit used to be
- Chest freezer in the main dining area will need a defrost in the near future
Other observations:
√ Coolers ≤4°C, Freezers ≤ -18°C, Hot holding ≥60°C
√ Cooling reviewed, ice wands used, recommend using new walk in freezer to help with cooling, especially of broths (*be careful of the amount of warm product that is put in here, if too much warm or hot product is put in here, it could affect the temperature of surrounding foods*). This would also reduce the need for using the space in front of the hand wash station near the back door.
√ Food up off floor ≥6”, no unsuitable containers for food found, no food stored in ceiling
√ Hand wash stations fully stocked
√ Quats sanitizer available at 200ppm
√ Low temperature dishwasher at 50ppm
√ General sanitation and maintenance is good
√ No signs of pest infestation noted
√ Thermometers present
√ Staff with FoodSafe present
√ No concerns noted with staff hygiene or food handling
