Observation (CORRECTED DURING INSPECTION): 1) Dirty dishes from service placed on clean dish rack
2) Several containers on clean dish rack soiled with dirty water
3) Ice machine with minor black buildup on the inside
4) Wiping cloths stored on table in kitchen. No sanitizer containers available
5) Sauce containers stored beside handsink underneath paper towel dispenser.
Corrective Action(s): Keep equipment, utensils, food contact surfaces in a clean and sanitary condition. Put dirty dishes on the dirty side of the dish table. Discard ice and clean and sanitize ice machine or purchased bagged ice from approved supplier. Store wiping cloths in sanitizer solution.
