Observation: - Component in interior of ice machine had visible mould/mildew present.
Corrective Action(s): - Ice from ice machine was emptied and surface cleaned and sanitized at time of the inspection.
Note: Some discolouration remained present.
- Ensure interior of ice machine is routinely cleaned and sanitized according to manufacturer's instructions.

Comments

- General sanitation of kitchen and equipment was satisfactory with the exception of ice machine sanitation noted in violation above (addressed/corrected at the time of the inspection).
- Handwashing sinks in kitchen and staff washroom supplied with hot and cold running water, liquid soap and paper towel.
- Walk in cooler was at 4C
- Line cooler 4C (designated for Legion use)
- Single door stainless cooler 3C
- Walk-in freezer -12C
- Small under counter freezer (designated for Legion use) not currently in use.
- Thermometers present inside coolers for temperature monitoring.
- Temperature monitoring in place for equipment in use
- Food stored in a manner to prevent contamination (wrapped, covered; raw eggs stored beneath ready to eat items).
- High temperature dishwasher was operational and met required temperature to sanitize dishes. Rinse temperature measured 74C at dish surface with min/max thermometer.
- Quats sanitizer (200ppm) present and in use for sanitizing food contact surfaces
- No signs of pest activity noted at time of the inspection
- Foodsafe requirements in compliance at time of the inspection. Kitchen Manager present and has valid Foodsafe level 1 certificate (course completed in 2019)

Note: Kitchen is shared/used by Legion for food service after 4pm Fri, Sat, Sun. Designated areas present in walk-in cooler, walk-in freezer, dry storage room and designated equipment (line cooler, undercounter freezer) for use by Legion.
