Comments

- Coolers are at 4 C or colder. Records are kept daily.
- Hand washing station has liquid soap and paper towels in dispenser.
- Chlorine in labelled spray bottle is used to sanitize counters, tables etc. (1 tsp bleach in 1 litre of water). - Fresh daily.
- Dishwasher has a hot water final sanitizing rinse (180 F final rinse at gauge / 71 C ++ measured inside of the machine today). Follow manufacturer's instructions for maintenance of machine.
Note: Well water may have minerals - Check to see if it is filtered.
- Turkey - defrost in cooler.
- Keep raw meat & poultry in leak-proof trays and on bottom shelf.
- Card given re: FoodSafe Refresher course. Refresher course is required if Food Safe taken more than 5 years ago.
