Observation (CORRECTED DURING INSPECTION): 1) A bag of dry ingredients was found stored on the floor.
2) An insert of cut tomatoes was stored directly on top of another insert of cut tomatoes
Corrective Action(s): 1) Ensure all foods are properly stored off the floor and protected from potential contamination. Ingredients were relocated off the floor at the time of inspection.
2) Do not double stack foods without a physical barrier between the items - to protect foods from potential cross contamination. Insert of cut tomatoes was relocated at the time of inspection.

Observation: Food debris was found accumulating along the door seals of the prep coolers.
Corrective Action(s): Ensure door seals are cleaned on a regular basis and are maintained in a clean and sanitary condition.

Observation: Prep cooler door seals are in need or repairs.
Corrective Action(s): Door seals need to be repaired or replaced. Ensure door seals are maintained in good condition to prevent loss of refrigeration air.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: One sanitizer spray bottle was unlabelled at the time of inspection.
Corrective Action(s): Ensure all containers are properly labelled to prevent accidental mixing or misuse of chemicals. Once labels fall off or fade, containers need to be relabelled.

Comments

-Walk-in cooler was at 4C.
-Alcohol walk-in cooler was at 4C.
-Walk-in freezer was at -17C.
-Kitchen prep coolers were at or below 4C (top and bottom).
-Bar cooler was at 4C.
-Hot holding was greater than 60C.
-Accurate thermometers present in cold holding units. Temperatures are checked and recorded daily.
-Chemical dishwasher had a final rinse of 50ppm to 100ppm chlorine sanitizer (minimum 50ppm chlorine required for proper disinfection).
-Glasswasher had a final rinse of 12.5ppm iodine sanitizer on the glass surface (minimum 12.5ppm iodine required for proper disinfection).
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles were tested at 200ppm.
-Ice machine was found to be clean and sanitary.
-Tongs are stored in ice - no longer stored in a Quats sanitizing solution.
-Deli slicer disassembled for cleaning and sanitizing after each use. Slicer was found to be clean and well maintained.
-Foods properly stored off the floor.
-General sanitation good at the time of inspection.
-Facility serviced by a professional pest control operator. No signs of pests noted at the time of inspection. When tin cat traps are moved for cleaning, ensure monitoring stations are returned properly (entry point next to wall).
-Washroom clean and sanitary.
-Kitchen staff FoodSafe Level 1 valid until Sept 28, 2023.
