Note:

1.Premise was doing prep at the time of the inspection and ingredients are being cooled without lids. This is acceptable. Ensure to put lids on containers after food items have cooled to 4C or below.

2.Cardboard boxes were used in walk in cooler prevent containers from slipping on shelving and absorb minor spills. Ensure to replace cardboard boxes when they become dirty.
