Observation (CORRECTED DURING INSPECTION): Manual warewashing sanitizer dispenser maintains 130-180ppm. 200 ppm is required as per the sanitation plan.
Corrective Action(s): Manually mix the quat sanitizer to maintain proper concentration as per sanitation plan( 200ppm for quats). Date to be corrected: immediately

-Routine Inspection
-Handwashing sinks contain hot water, liquid soap, and paper towel
-Coolers measured 4C or less
-Freezers measured -18C
-Temperature logs available and posted on the doors in front of coolers and freezers
-Panwasher room maintains above 82C sanitizing cycle. Thermolabels kept tracked in a binder.
-Pest control reports available
-All products shipped frozen
-All food covered and protected from contamination
-Metal detector checked and calibrated with logs available for review
-Note: Cake mixing side is not in operation at this time. Operation will resume in January 6, 2019
-Note: Mold and mildew growth removed in panwashing area. Sealant at floor/wall junction in cake mixing area fixed. Sealant at floor/wall junction in puff line peeling off and will be addressed by maintenance team.
