Observation: 1) Quat sanitizer measured at 100ppm at time of inspection.
2) Quat test strips not available for staff
3) Wiping rags stored on open table - not inside of sanitizing bucket
Corrected during inspection
Correction: 1)Adjust sanitizer level to achieve 200ppm quat concentration
2) Ensure that quat test strips are available at all times to allow for testing of sanitizer concentration
3) Ensure that wiping rags are kept disinfected by storing in sanitizer solution when not in use

Time tracking is being done, time is for when item comes out oven not when placed in front display (Time is per batch). Discard after 6 hours, this includes items in back. Bake new savory items for afternoon.
