Observation (CORRECTED DURING INSPECTION): Pizza prep cooler undercompartment > 4 C, compartment temperature gauge indicated 53 F. Following internal temperatures taken: green peppers 8 C, italian sausage 8.4 C, boneless chicken (wrapped in foil) 12 C. Unit rechecked after 45 minutes, internal temperature of ham 8.8 C, compartment temperature gauge still at 53 F.
Corrective Action(s): All potentially hazardous items discarded.

No signs of pest activity. Reviewed pest reports, premises currently on monthly service; no mention of activity during previous service.
Spray sanitizer ~ 400 ppm --> should be ideally 200 ppm based on the manufacturer's directions.
Foodsafe staff on-site.
Beverage display 7.8 C ambient temperature but no potentially hazardous food items stored.
