Observation: High-Temp mechanical dishwasher not in operation. Operator stated that she was told the dishwasher does not work. Operator washes and sanitizes dishware in 2 comp sink. Operator explained dishware washing procedure and it aprears proper procedure is followed.
Corrective Action(s): Test run the mechanical dishwasher to ensure it works and reaches required sanitation temperature of 71 degree C at the dish surface. Contact your health inspector to discuss requirements after.

Routine inspection

- Hand washing station supplied with hot/cold running water,liquid soap and paper towels in dispenser.

QUAT sanitizer available to sanitize dishware using 3-comp sink method. See violation above regarding mechanical dishwasher.
Note: Ensure this method of sanitizing dishware is not effecting your septic system as in the original design high-temp dishwasher was installed to sanitize dishware utilizing only hot water.

- Cutting boards noted clean and maintained.
- All coolers measured at or below 4 degree C. All freezers measured at or below -18C. Temperature monitoring log maintained. Thermometers noted in units.
- Dray storage observed clean and food stored above floor. No sign of pest activity observed at this date.
- Lighting in kitchen and storage noted adequate.
- General sanitation is overall good.

Reminder: Only food is to be kept in coolers. food must be protected and covered. Some "Objects", other than food may pose a risk of bacteriological or physical contamination to food stored in cooling unit. This was discussed and explained to the operator at the time of inspection.
