*Always use metal containers when cooling hot items such as soup. Use an ice water bath to assist in cooling. PHF's must drop in temperature from 60 to 4 c within 6 hours. Dishwasher at 129F and approx. 60ppm chlorine. Soap dispensed into wash cycle. All cold holding equipment cold holding at <4c Freezers at <-18c Monitoring logs being maintained Back door tripping hazard has been fixed and is no longer a tripping hazard.
