Spray bottles have been labelled
Dishwasher checks occurring daily, records up to date
Glasswasher check hasn't occurred for a few days. Staff on site were shown how to test (using EHO's test strips) and today's reading was recorded
Hot holding occurring in a hot water bath on the flat top grill. As discussed, you may also use a commercial grade hot holding unit. The most important thing is the food getting held at 60C minimum at all times.
Ice separation at bar - a barrier has been ordered. In the meantime and insert/ stainless steel bucket is being used. OK
