Observation (CORRECTED DURING INSPECTION): Quats sanitizer in two pails were measured with a concentration of less than 200 ppm. It was observed the sanitizer dispenser was not connected properly and was not able to dispenser any Quats sanitizer.
Corrective Action(s): Dining manager reconnected line for the sanitizer dispenser and 400 ppm Quats sanitizer were measured. Staff discarded and refilled the pails with 400 ppm Quats sanitizer. Clean and sanitize all food contact surfaces in the kitchen. Ensure test strips are used to verify the concentration of the sanitizer daily.

Observation (CORRECTED DURING INSPECTION): Hand washing station beside the walk-in cooler was not provided with hot/cold running water and single-use paper towels. It was observed the water lines were turned off and manager stated there was a minor leak.
Corrective Action(s): Service the hand washing station to ensure hot/cold runing water are provided at the hand washing station. Refill the paper towel dispenser with single-use paper towels.

Observation: Rodent droppings noted in the dry storage area and behind the cook line. Pest control reports reviewed.
Corrective Action(s): Clean up the droppings and continue to monitor for rodent activities. Ensure the bay door is sealed properly and foods is stored in tight sealed container. Correct by: May 29, 2024
