Observation: 1) Floors build up of grime under shelves, under equipment, in hard to reach areas
2) Cutting board at prep tables grey/black spots, food can enter grooves and turn black (mold) over time
Corrective Action(s): 1) Clean floors thoroughly, use a degreaser to remove grime build up
2) Use a bleach solution to saturate cutting boards at prep tables, this can be done daily end of night and left to airdry. If this does not resolve the issue replace cutting boards
