Observation (CORRECTED DURING INSPECTION): Shredded beef on the hot-holding unit measured at 55.5C internal temperature. Operator informed that it was made an hour ago.
Corrective Action(s): Reheat the aformentioned item. All hot potentially hazardous foods must be hot-held at 60C or higher.

Observation (CORRECTED DURING INSPECTION): 1 handwashing sink near the hot-holding area, 1 handwashing sink near the ice cap machine observed to be obstructed with a tray and lack liquid soap. The handwashing sink near the ice cap machine observed to be clogged. 1 handwashing sink near the office observed to be turned off and operator inform that it is leaking.
Corrective Action(s): Temporary use the other 2 remaining handwashing sink for staff hand hygiene.

Observation: Built-up of food debris observed underneath the following areas:
-Walk-in freezer shelving unit.
-Dry storage racks.
-Chemical storage racks.
-Donut area.
Corrective Action(s): Clean and sanitize the aformentioned area. Daily cleaning under hard to reach areas must be conducted to prevent build-up of food debris. Corrected by: April 21, 2023.

Observation: 3 handwashing sinks (near office, near ice cap machine, near hot-holding area) observed to be blocked, water turned off, and/or lack liquid soap. Walk-in freezer measured at -5C air ambient temperature.
Corrective Action(s): Service all 3 handwashing sink (near office, near ice cap machine, near hot-holding area) to ensure that they are well equipped with hot and cold running water, liquid soap, and paper towels. All handwashing sinks must be clear from all obstructions to faciliate proper hand hygiene. Service the walk-in freezer to hold an air ambient temperature of -18C or lower. Routine Inspection conducted today.

2 handwashing sink near the front entrance are well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs sanitizer buckets and dispenser measured at 200ppm. 3-compartment sink available. High-temperature dishwasher measured at 76.8C final rinse temperature.
Prep cooler, walk-in cooler, milk compartment and ice cap compartment measured at 4C or lower. All hot-holding unit other than the shredded beef measured at 60C or higher.
No signs of pests observed.
