Observation (CORRECTED DURING INSPECTION): Roast chickens in the hot holding (alto sham) unit was @ 45-48oC. The chickens were cooked in the oven approximately 2 hours prior to put into the hot holding unit.
Corrective Action(s): The chickens were directed to be reheated @ 74oC.
A daily cooking/hot holding temperature log was not kept for the last 2 days.
Ensure to check the temperature of the chicken daily/hourly as per the food safety plan.
The hot holding unit temperature was increased during inspection
