Observation (CORRECTED DURING INSPECTION): Sanitizer dispenser (QUATS) not functioning in chemical dispenser. Staff manual mixes sanitizer 1:1 ratio.
Sanitizer >> 400ppm at time of inspection.
**Corrected during inspection** Inspector educated staff on site. Proper mix ratio is 27-50mL sanitizer concentrate : 10L water. New batch of sanitizer mixed measured 200-400ppm.

Contact ecolab to have dispenser serviced. Educate staff so everyone knows how to properly mix sanitizer solution.

Observation: 1. *REPEAT* (Since Nov 2023) Cleaning needed in the following areas:
a. Ice machine: pink/black build up observed along lip of plastic dispenser inside unit
b. Table mounted can opener blade observed to have heavy build up of dried food debris
c. Cutting board at bar observed to be heavily scored and discoloured

2. *REPEAT* (Since Sept 2022) Soda gun observed to have build up of dried soda on nozzle.

b. Black build up on floor under prep sink

d. Cardboard / plastic / beverage leak in walk-in cooler (alcohol side, right behind entrance to walk-in cooler)
e. Fans of walk-in cooler compressor need cleaning
f. Build up of debris under bar sink and bar shelving

Handwash station equipped with hot/cold running water, liquid soap and paper towels
QUATS sanitizer in spray bottles measured 200ppm by end of inspection
Mechanical dishwasher measured 50ppm chlorine at plate level
Glass washer measured 12.5ppm iodine
Laundry done on site

Storage:
All food items were stored at least 6" off the floor.
Most products were either in original packaging or covered inside coolers.
Storage area was well-organized.
Chemicals and cleaners were stored separate from food preparation areas.

General:
No pest activity observed at time of inspection

Hoses at mop sink observed to be dangle under lip of mop sink. This is a potential hazard if there is negative pressure on the main water line.
Store hoses so the end of the hose is above lip of mop sink.
