Observation (CORRECTED DURING INSPECTION): Found large pots and pans of foods cooling in freezer ranging from 35 to 40 C, cooked 2 hours prior.
Corrective Action(s): Must cool foods from 60 to 20 C in 2 hours in small portions. then from 20 to 4 C in 4 hours in cooler.
Do not cool in larger pots.

Observation: 1. Dishwasher had a final rinse of 0 ppm chlorine, no chlorine coming out of dispenser.
2. Found can opener with food caked on
3. Found dough roller to have food debris inside (last used 1 week prior)
4. Large pots are washed in dirty side of dishwasher (no sink) and rinsed after wiping down with sanitizer.
Corrective Action(s): 1. Have dishwasher repaired to ensure sanitizing cycle is 50 ppm chlorine
2. Wash and sanitize can opener to remove all food after each use
3. Properly wash and sanitize dough roller to remove all food debris even if not working to prevent attracting pests.
4. Large pots must be washed with soap, rinsed and sanitized with 200 ppm chlorine or 200 ppm quat then air dried. Use 2 compartment sink.

2. Found multiple items put in to the cooler with out proper covers.
Corrective Action(s): 1. Must keep foods off of the floor by 6 inches/15 cm at all times. especially prepared foods like peeled onions.
2. Must cover all foods with plastic wrap, tinfoil or lids when putting away in cooler/freezer/dry storage.

Corrective Action(s): Have pest control treat the drain and replace the broken cover to prevent rodents from coming up.
