Observation (CORRECTED DURING INSPECTION): No sanitizer detected in the container in the front service area with cloths submerged. Only one bottle of spray sanitizer noted in the back food preparation area but reusable wiping cloths were being used.
Corrective Action(s): Ensure quat sanitizer is at 200ppm at all times. Keep cloths stored in sanitizer of adequate minimum concentration to prevent the growth of pathogens on cloths.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hand wash station beside the back kitchen entrance did not have paper towel and was blocked by a bin. No paper towel was available at the front drink preparation area, staff said that they use a reusable cloth towel to dry their hands.
Corrective Action(s): Ensure all hand wash stations are fully accessible at equipped with single use paper towels.

Observation (CORRECTED DURING INSPECTION): Reusable wiping cloths were being used to dry hands in the front drink preparation/service area.
Corrective Action(s): Only single use paper towels are to be used to dry hands in the food premises.

Observation: Noted a dry storage area upstairs for food and paper products. Two freezers located upstairs. This dry storage space was not identified on the floor plans. Only prepackaged foods and paper products permitted in this area. Noted large bags of pastries in the freezer. Food is not to be dispensed/portioned from this area.
Corrective Action(s): Submit floor plans identifying this dry storage space. Also, ensure only prepackaged foods are stored in this area and that there is not dispensing/portioning of foods in this area.

Comments

All coolers 4C or less (walk in cooler, prep cooler unit, cold holding wells with ice...etc); 2 door freezer -19C; Hot holding of gravy 72C
Inserts of food on ice beside cookline were fully submerged in ice. Inserts are turned over well within 2 hours.
Good general sanitation. No obvious sign of pest activity noted at time of inspection.
Ice machine appeared clean with scoop for ice secured to the side of the ice machine.
Quat sanitizer at source 200ppm.
High temperature dish washer achieved 71C (with thermolabel).
Observed proper cooling of ham hock at time of inspection. Staff member was pulling apart the cooked item and spreading out over large shallow pan.
