Observation (CORRECTED DURING INSPECTION): Small amount of mould/mildew observed inside ice machine. Mould and mildew can contaminate ice, which is a food.

Correction: Operator immediately cleaned the mould/mildew off. Must clean inside of ice machine with a clean cloth and sanitizer every 2 weeks to prevent growth of mould or mildew.

Observation: QUATS solutions was in a unlabelled sprayer bottle. Detergent was in an unlabelled sprayer bottle. Detergent was in an unlabelled sprayer bottle. Unlabelled bottles may cause accidental contamination of foods.

Observation: The laminate floor is becoming very worn out, with a hole obvious in the flooring. Damaged floors do not permit easy cleaning and are therefore not acceptable. (Staff areas).

General Comments:
* Facility was clean and in sanitary conditions overall. A few areas require improvement: Outsides of ice machine, coolers, and freezers, underneath front counters/coolers.
* Recommend to thaw out freezer more frequently to remove build-up of ice.
- All coolers were at 4C or less
- Black fridge - 4C
- Small under counter cooler: -5C
- Front display cooler: 4C
- Back room under counter/prep cooler: 4C
- Front prep cooler: 11C --> power outage this AM. Acceptable, however, since cooler holding only bubble tea syrups (sugary)
- All freezers were at -18C or less
- Black fridge/freezer: -20C
- Small deep freezer: - 20C
- Upright deep freezer - 30C
- Hot-holding was at 60C or above
- Handsinks had hot water, liquid soap + paper towel
- FOODSAFE certified staff present
- Permit posted
- QUATS sanitizer was @ 200ppm
- 3 compartment sink for washing dishware
- Ventilation exhaust fume was clean
- Thermometers present.
- No signs of pests observed
- Foods protected from contamination.
Bleach Sanitizer Recipe:
100-200ppm chlorine required. To make use 30ml (1 tablespoon) of 5% unscented bleach per 4.5 litres (1 gallon) of water.
