Observation (CORRECTED DURING INSPECTION): There is a significant build up of grease and dirt on the stainless steel can opener.
Corrective Action(s): Disassemble the can opener. Clean and sanitize the equipment immediately and on regular basis.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): The back handwashing station is obstructed by a chair and multiple buckets of oil.
Corrective Action(s): Move the chair and other objects at and near the back handwashing station. All handwashing stations must be easily accessible by all staff to properly wash hands.

Observation: The decal on the Operator's Permit has expired. Spoke with the owner of the food service establishment. He stated that the overdue permit fee has been paid and invoice will be submitted via email.
Corrective Action(s): Send the invoice to the health inspector. You have up to two business days.

Observation: There was build up of grease and oil on the floors of the main kitchen.
Corrective Action(s): Clean the floors. Keep the floors dry and free of build up of grease and oil.

Observation: 1) The door of the front beverage upright cooler does not close properly.
2) The back vegetable upright cooler is measured at 9C at the time of the inspection. Only vegetables and non potentially hazardous food items are stored.
Corrective Action(s): 1) Fix the door. Ensure that the door closes securely. Do not store any food items inside this cooler.
2) Fix or service the cooler. The cooler must maintain temperature < or = 4C at all times.

- General sanitation is good.
- All handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All other coolers (upright, walk in, prep) < or = to 4C
- Freezer (chest) < or = to -18C
- You must begin a temperature log for all coolers and freezers. The temperature log template will be sent via email.
- Hotholding unit > 60C
- There is a secondary cooking step for all donair meat.
- Leftover donair cones are curved to the raw portion and covered, stored in the cooler at < 4C.
- 3 compartment sink available for manual dishwashing. Bleach sanitizer available at 100 ppm. Do not store any dirty dishes or equipment inside the sanitizing compartment of the sink.
- Surface sanitizer available in spray bottle at 100 ppm bleach solution. Ensure to have surface sanitizer readily available both in the back and front of the kitchen.
- Dry storage area is good.
- No signs of pest activity.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.
