- Handsinks are supplied with hot and cold running water, soap and paper towel
- Upright stainless steel coolers, prep cooler, drinks cooler and under counter cooler are all maintained at less than 4C
- Upright freezer measured at -16C
- Hot holding unit for rice at the back is measured at greater than 60C
- Hot holding prep table is greater than 60C
- Sanitizer solution at three compartment sink, buckets and spray bottle are measured at 200ppm quats concentration
- No evidence of pest activity at the time of inspection
- Food storage practices are satisfactory
- Discussed the cooling procedure with operator: Ensure that the products cools down from 60C to 20C with tin 2 hours and from 20C to 4C within 4 hours in cooler
NOTE: Beans and tomatoes are cooked on induction stoves. Ensure that proper cooling procedure is followed
- Adequate temperature logs are maintained
- Foodsafe certification verified
- General sanitaiton is satisfactory
