Observation (CORRECTED DURING INSPECTION): Staff thawing frozen seafood inside the designated handwashing sink in the back of the kitchen.
Corrective Action(s): Remove the food from this sink. This is a designated handwashing sink and must be used for handwashing only.

Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher dispensed 0ppm chlorine bleach concentration at the time of the inspection. Staff did not have any appropriate test strips to test the sanitizer concentration.
Corrective Action(s): Call the technician for assistance. The low temperature dishwasher must dispense at minimum 50ppm chlorine bleach concentration.

Comments

- General sanitation is satisfactory.
- All handwash sinks equipped with hot/cold running water, liquid hand soap and single-use hand towels in dispensers.
- Surface sanitizer in designated bins at 100ppm chlorine bleach concentration.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity at the time of the inspection. A third party pest control company inspects the premises on a monthly basis.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.
- Washrooms appear to be in clean sanitary condition. Handwashing stations fully stocked.

Temperature control:
- All prep coolers < or = 4C
- Walk in cooler = 4C
- Walk in freezer = -24C
- Upright freezer = -18C
- All hot warmers > or = 60C.
- Unable to verify temperature log. This will be verified during the next follow up inspection.
