Observation (CORRECTED DURING INSPECTION): Low temp dishwasher noted 0 ppm chlorine detected at plate. Sanitizer bucket full and connected to unit during inspection.
Corrective Action(s): Ensure dishwasher is capable of sanitizing dishes at 50 - 100 ppm chlorine during the sanitizer cycle. Repair unit / prime chemical lines.
Until dishwasher is able to sanitize dishes the unit can still be used for: 1. Wash 2. Rinse , then the dishes must be removed from unit and placed in sanitizer solution 50 - 100 ppm chlorine in 1 comp of 3 comp sink for 3. Sanitize step , then 4. Air dried on drying shelf.

Observation: 1. Pies in walk in freezer stacked on top of each other directly on pie tops.
2. Bulk bin scoopers stored with handles in dry bulk food.
Corrective Action(s): Ensure all food is protected from contamination.
1. All food must have protective cover or layer between the top of the pie and the bottom of the next pie plate.
2. Bulk scoopers must be stored with the scooper handles stored outside of the food to prevent staff having to reach into the food to grab handles.

Observation: 1. Gap under back emergency door to stairway
2. Door missing from back water pipe room next to janitor room.
Corrective Action(s): Ensure premises is maintained to prevent pest entry.
1. Install door sweep under back emergency door and any other exterior doors.
2. Install proper door at the entrance of the water pipe room. Currently another removed door is leaning on the door frame of this room but is not sufficient in its current use.

Observation: Old mouse droppings noted in back janitor slop sink room behind /beside hot water tank and in next room around large water pipe.
Corrective Action(s): Ensure all droppings are cleaned up to allow for proper monitoring for current pest activity in these areas. No other droppings noted in premises during inspection.

Observation: 1.Coving noted on last inspection still required on the lower wall/floor connection left of the service counter.
2. Flooring has peeled and been removed in processing area
Corrective Action(s): Ensure all areas in premises can be maintained in sanitary condition.
1. Coving must be installed to prevent food and debris getting trapped between the wall and floor connection and allow easy cleaning.
Correction date: 1 week
2. Damaged flooring must be replaced with smooth, durable, easy to clean material. All missing and damaged flooring allows food and debris to be trapped and makes it difficult to clean. Repair/replace flooring in damaged areas.
