Observation (CORRECTED DURING INSPECTION): Dishwasher was not properly dispensing sanitizer into cycle. 0 ppm chlorine detected at dish surface after rinse cycle.
Corrective Action(s): Sanitizer line was primed at time of inspection; 50 ppm chlorine detected at dish surface. Repeat violation. Ensure to use test strips to check dishwasher sanitizer concentration daily. Ensure to prime sanitizer line each time after switching sanitizer supply or after line gets pulled out.

Comments

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Quats sanitizer solution available at 200 ppm
- Prep coolers, beverage coolers, and walk-in cooler were at 4C or colder
- Ice cream freezer was at -18C. Clean ice cream scoop was stored in designated holder - reminder to wash ice cream scoop after each use.
- Hot held soup measured to be above 60C
- Food storage practices satisfactory. All food stored off the floor, properly labelled, and covered.
- Temperature logs well maintained.

Note: Operator currently working to resolve drain fly issue - not a significant number of live flies noted at time of inspection. Ensure to keep all areas clean and free of food debris and moisture. Contact a professional pest control company if problem persists.
