Observation (CORRECTED DURING INSPECTION): - Dishwasher tested 0ppm chlorine.
- Chlorine sanitizer in Spray bottle and bucket tested 0ppm.
Corrective Action(s): - Ensure sanitizer concentration in dishwasher, spray bottle & bucket for sanitizing food contact surfaces 100-200ppm.
- Owner corrected it during inspection.

Comments

Routine inspection conducted with the presence of the owner couple.

- General sanitation was satisfactory.
- Hand wash sink fully equipped with hand soap, paper towel and hot/cold running water.
- Prep cooler, walk in cooler and upright cooler < or = 4C. Sweet display cooler measured 2.8C.
- Upright freezer -18C
-No hot holding at the time of inspection. No perishable food stored under room temperature.
- Food containers in the walk in cooler properly covered. Floor was in a sanitary condition
-Ice machine was in sanitary condition. Ice scoop placed inside the ice machine to prevent food contamination.
- No food debris or grease built up underneath and behind the prep cooler, hand washing sink, dishwashing pit, stainless steel worktable beside deep fryer.
- No sign of pest activity observed in the facility. No holes on the back screen door.

Note: (1) Order chlorine test strip, check the chlorine concentration DAILY (100-200ppm).
(2) Clean the dust on the screen door; clean the racks in the middle of the kitchen.
(3) Equip the sink (by the side of dough mixer) with hand soap and paper towel to facilitate staff washing hands when they prepare food in that area.
(4) Keep all the food containers, cookware off floor.
