Observation (CORRECTED DURING INSPECTION): Single serve condiment packages including ketchup, mustard and relish in open boxes observed adultrated by mouse activity. Multiple packages chewed in the boxes and mouse droppings observed on and in the boxes. Some of the condiment boxes chewed. Unopened boxes of spoons not adultered or chewed. Pictures taken.
Corrective Action(s): Discard all open and/or adultered boxes of condiments in this concession. Operator complied. Prior to opening this concession the entire concession, including work surfaces and floor requires a cleaning and/or sanitization process as the mice have likely contaminated all shelves and food contact surfaces to ensure all food served from this concession is not a risk to public health. Follow up inspection to review rodent activity needed.

Observation: Mouse droppings observed throughout concession, including floor shelves and work surfaces. Pictures taken. Concessions not currently in operation as it is the end of the hockey season and prior to the start of the basketball season. Access likely via electrical and plumbing conduits and possibly under the concession entry door to the rest of the facility.
Corrective Action(s): Mouse droppings must be removed in their entirety prior to any and all events. Cleaning and sanitizing process to all primary and secondary food contact surfaces prior to any and all events must be completed by staff. Written sanitation procedures must be created for staff to follow. Further discussion required on this subject, preferrably at follow up inspection date noted.

Comments

Make sure handwash station always fully stocked with liquid soap and paper towels prior to events.
Quats sanitizer concentrate was empty at auto dispenser at sink and as such residual was 0 PPM. Replaced with full container during inspection. Make sure staff properly stock chemicals for dishwashing so chemicals are present at all times.
