- Follow-up inspection.
- Only a small portion of pre-fried chicken and potato wedges were held out at room temperature in anticipation of lunch rush. Good. - reminder that potentially hazardous food items must not be held out at room temperature for more than 2 hours.
- Battering station is now being time-tracked with stickers - good.
- Reviewed cooling procedures with staff onsite - OK.
- In-use utensils were clean at time of inspection. Reminder to clean and sanitize in-use utensils every 2 hours at a minimum.
- Scoops no longer being stored directly in dry ingredients.
- Deep cleaning has been done - ensure to continue deep cleaning (including scraping up stuck-on food debris when needed) at least once a week.
- Cardboard being used to line the floors under the deep fryers was noted to be clean. Staff are now changing out the cardboard (discarding) daily - OK.
