Observation (CORRECTED DURING INSPECTION): Dishwasher is not working (see code 308). Concentration of quats sanitizer was inadequate.
Corrective Action(s): Service the dispenser. After washing dishes in the dishwasher, immerse dishes in a bleach solution as discussed.

Observation: Temperature of the dishwasher rinse water as measured at the rack level did not reach the required minimum temperature of 160F. A temperature of 147F was recorded after two tries. The unit had been used that morning. Thermo label and max holding thermometer were used for testing.
