Follow up inspection to report F230323

Rice and potatoes were just cooked for catering function. Observed potatoes being stored in shallow metal inserts and cooled over cooling rack. Rice is being portioned into take out boxes for function.
No improper cooling at time of inspection.
Bleach sanitizer available in 100ppm in kitchen and bar area; wiping clothes were stored inside the buckets.
Still some mice droppings present around dishwasher and electric panel closet; ants more noticeable in bar area.
-> Discussed that ice cubes shall be stored in container with tight fitting lid to prevent ants from contaminating ice used to make drinks.
Operator has placed some traps himself but a professional company will be servicing the restaurant tomorrow.

The "hole" noted in hot water tank has a screen in place for vent exhausted to outside.
The hole under dishwashing area is still present and shall be sealed permanently. Leaky issue is resolved.
