[s. 14(3)] Observation: Stand up freezer by the back storage, chest freezer and another stand up freezer near the entrance to the kitchen were operating above -18'C. All three units had a thick layer of ice build-up inside. Corrective Action(s): Ensure to have all freezers defrosted. Do this on a monthly basis. Violation Score: 1

Routine inspection conducted: - Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water. - Coolers operating at/below 4'C; Freezers operating at -18'C, except mentioned above. - Food stored in pest proof containers. - 200ppm Chlorine solution available in a labelled spray bottle. - Manual dishwashing sink equipped properly. - Traps in place. No evidence of pest activity observed. General maintenance and sanitation level satisfactory. Clean flour dust by the dough mixer on a more regular basis as discussed at this time.
